My question is, if I have a Greek citizenship but have attended school kindergarten---high school plus a few years of university (not completed, yet) in Canada, would I still be required to have a university degree to teach English at the frontistiria in Greece? Thnx.
I also speak Greek fluently, and have a Greek high school diploma from Canada.

You might be able to get away with having Cambridge Proficiency in English, however the chances are they will be strict and you’ll need a degree plus tesl certificate plus, at the moment, sufficient knowledge of Greek to pass the local requirements. (Incidentally, those local requirements are against EU law and therefore technically illegal but that’s another matter).

The minimum qualification you need in order to teach at a Foreign Language Centre is a ’statement of adequacy’ (επάρκεια). To get this, you need to have finished secondary education and demonstrate ‘excellent command’ of the language. For the latter you will need a certificate such as the Certificate of Proficiency issued by Cambridge ESOL, or a degree from an English-speaking university.

Here’s the relevant link from the Greek ministry of education (in Greek) outlining what documents you need to supply to obtain such a statement.
